Tasty and Delicious Resepi Masak Lemak Pucuk Ubi

Ingredients

Making a delicious and flavourful Resepi Masak Lemak Pucuk Ubi requires a few ingredients. These are:

  • 1.5kg of taro stems cut into pieces
  • 2 large onions, chopped
  • 6 cloves of garlic, minced
  • 2 cm fresh ginger, minced
  • 3 tablespoons of cooking oil
  • 1 teaspoon of turmeric powder
  • 1 teaspoon of chilli powder
  • 1 teaspoon of sugar
  • Salt to taste
  • 200ml of coconut milk
  • 2 tablespoons of tamarind juice
  • 2 tablespoons of roasted peanuts, ground

Cooking Instructions

To begin, heat the oil in a large pan over medium heat. Add the onions, garlic and ginger and fry until fragrant. Add in the turmeric, chilli powder and sugar, and fry for a few seconds. Then, add in the taro stems and stir to combine.

Add in the coconut milk and tamarind juice and season with salt to taste. Bring the mixture to a boil and reduce the heat to low. Simmer the taro stems until they are cooked through, about 15 minutes. Add in the ground peanuts and stir to combine.

Turn off the heat and transfer the Resepi Masak Lemak Pucuk Ubi to a serving dish. Serve with steamed rice or warm flatbreads. Enjoy!

Tips

You can also add in some fried shallots and chopped chillies to the dish, to give it an extra kick.
