What is Pucuk Ubi?
Pucuk ubi is a type of root vegetable belonging to the yam family. It is a versatile ingredient that can be cooked in a variety of ways. In Malaysia, pucuk ubi is often cooked as a side dish with a spicy, savory gravy called ‘lemak’.
Ingredients for Pucuk Ubi Masak Lemak
- 500 grams of pucuk ubi
- 1 red onion, finely chopped
- 2 cloves of garlic, finely chopped
- 2 stalks of lemongrass, finely chopped
- 1 teaspoon of chilli powder
- 3 tablespoons of cooking oil
- 1 cup of coconut milk
- Salt and pepper, to taste
Instructions to Make Pucuk Ubi Masak Lemak
Step 1: Preparing the Pucuk Ubi
Wash the pucuk ubi thoroughly and peel off the skin using a sharp knife or a vegetable peeler. Cut the pucuk ubi into small cubes and set aside.
Step 2: Making the Gravy
Heat the cooking oil in a large pan over medium heat. Saute the onion, garlic and lemongrass until fragrant and lightly browned. Add the chilli powder and fry for another minute. Add the coconut milk and bring to a boil. Reduce the heat and simmer for 5 minutes. Add the pucuk ubi and season with salt and pepper. Simmer for another 10 minutes or until the pucuk ubi is cooked through.
Step 3: Serving the Pucuk Ubi Masak Lemak
Transfer the pucuk ubi masak lemak to a serving bowl and serve warm with steamed rice. Enjoy!
