Instructions
To make the cream puffs, preheat the oven to 375 degrees F. In a medium saucepan over medium heat, melt the butter. Add the water, then bring the mixture to a boil. Add the flour and salt, then stir until the mixture comes together and forms a ball. Remove from heat and let cool for 5 minutes.
Add the eggs to the cooled dough and beat until the mixture is smooth and glossy. With a spoon, drop the dough onto a parchment-lined baking sheet. Bake for 25 minutes, or until golden brown.
Meanwhile, make the filling. In a medium bowl, whisk together the cream, sugar and vanilla extract until light and fluffy.
Once the cream puffs are cooled, cut each one in half and fill with the cream. Serve immediately or store in an airtight container for up to 3 days.
