Ingredients
For the sambal sauce, you will need:
- 2 tablespoons of vegetable oil
- 1 teaspoon of chili powder
- 1/2 teaspoon of ground coriander
- 1/2 teaspoon of ground cumin
- 1/2 teaspoon of garlic powder
- 1/2 teaspoon of sugar
- 1/4 teaspoon of salt
- 1/4 teaspoon of black pepper
- 1/4 teaspoon of turmeric powder
- 1/4 cup of coconut milk
- 2 tablespoons of tomato paste
For the eggs, you will need:
- 6 eggs, boiled and peeled
Instructions
1. Heat the vegetable oil in a saucepan over medium-high heat. Add the chili powder, coriander, cumin, garlic powder, sugar, salt, black pepper, and turmeric powder. Stir to combine.
2. Add the coconut milk and tomato paste and stir until the mixture is smooth and combined. Simmer for 3-5 minutes until the sauce has thickened.
3. Add the boiled eggs and stir to coat in the sauce. Simmer for an additional 5 minutes, stirring occasionally.
